Ingredients for 4 persons:
Dish:
- 900 grams of Baby potatoes (2 bags)
- 900 grams of roast beef
- 3 cloves of garlic
- 1 yellow pepper
- 200 grams of cherry tomatoes
- Fresh sprig of thyme
- Butter
- Olive oil
- Pepper and salt
Sauce:
- 25 grams of unsalted creamed butter
- 2 tbsp wheat flour
- 300 ml semi-skimmed milk
- 150 grams of grated old cheese
Preperation
- Remove the roast beef from the fridge 1 hour in advance and let it come to room temperature.
- Put a pan on the heat, melt a knob of butter and sear the roast beef all around in the hot butter. Put the roast beef in a baking dish.
- Meanwhile, cut the sweet pepper into strips.
- Add the potatoes, pepper strips and cherry tomatoes to the roast beef in an oven dish. Drizzle with olive oil and season with fresh thyme, salt and pepper and arrange the garlic cloves in between. Let everything cook in the oven for about 30 minutes.
- Meanwhile, melt butter in a saucepan. Stir in the flour and cook over low heat, stirring, for 3 min. Add the milk and bring to the boil, stirring. Simmer on low heat for 5 min. Add the cheese and stir until melted. Season with pepper and salt if necessary.
- Remove the roast beef from the oven and wrap in aluminium foil. Let rest for another 15 minutes. Cut thin slices of roast beef and stir in the sauce with the potatoes, peppers and cherry tomatoes.
